The Perfect Cake - Lemon Yogurt Blueberry Cake

I wish there is perfect technique for baking...wait but there is.
It is called repetition.
Yes, repetition leads to mastery.
So, if you want to bake one perfect cake, please repeat.
Repeat as many times as you want it. The cake that I will bake
for you today, I made many, many times.
It is Lemon Yogurt Blueberry Cake. The cake can be bake
in 9x9, 9x5 or 9x13 inch pan.
The notes about the cake:
-it is so moist ( like imagine yourself turn by the hottest man who is asking "Are you wet?" ...and you can't answer because your body is in the blender producing juice....)
-it is delicate (like "The Princess and the Pea")
-it is special and so simple
It is like Jessica Alba...you have to try it....

Lemon Yogurt Blueberry Cake
Adapted from Ina Garten

1 1/2 cups + 1 tablespoon flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup yogurt
1 cup sugar
3 large eggs
1/4 teaspoon vanilla extract
1/2 teaspoon lemon
1/2 cup oil
1 1/2 cup blueberries


 1. Sift together flour, baking powder and salt 
         

   

2. Mix together the yogurt, sugar, the eggs, vanilla, lemon and oil
 

 
 
 
 
3. Whisk the dry into the wet ingredients
 
 
4. Mix Blueberries + 1TBSP of flour
 

5. Fold the blueberries into the batter

 
 

6. Pour into prepared pan


7. Bake on 350 F for 55 min or until a cake tester placed in the center comes out clean.



8. Cook 1/4 cup lemon juice and 1 TBSP sugar until sugar dissolve.
While the cake is still warm, pour the mixture over the cake

Pumpkin Pregnant Cookie

Since I don't like facts and I like baking here is my recipe for today.
It is called "Pumpkin Pregnant Cookie".
I had a dream that pumpkin chocolate cookie got pregnant. The baby that was inside was Oreo.
The birth place was Sweet Country.
So let's welcome our new delight...

Pumpkin Pregnant Cookie

1 cup butter
1/2 cup brown sugar
1 cup granulated sugar
10 ml vanilla
180 gr pumpkin puree
3 cups AP flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 TBSP cinnamon
1/2 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/4 teaspoon nutmeg
2/3 cup chocolate chips
1/2 cup mini cinnamon chocolate chips
Oreos

Directions:
1.Melt the butter and sugars.
Add vanilla and pumpkin. Mix until smooth.
2.In another bowl mix dry ingredients. (flour, salt, baking powder, soda, cinnamon, pumpkin pie spice and nutmeg)
3. Pour the wet ingredients into the dry and mix together.
4. Add chocolate chips.
Cover the dough and chill for 1-3 hrs.
When you think that you are ready as well as the dough in the fridge, preheat the oven
to 350F Degrees.
Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo cookie,take another scoop of dough and place on bottom of Oreo cookie. Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough. (we want child to be protected)
I have 8 cookies per sheet which I chill for 5 min before sending to oven.

5. Bake the cookies for 10 min.

Remove from the oven and look...and look again.. and wait....when you are emotionally ready enjoy our dream...

How do you create magic in your life?

Let's create magic.
For me, magic is always the same - Nutella Pots de Creme ..
I recently read a story that a truck full of Nutella disappeared.
Secretly, I was afraid that I did it.
Simply, I can imagine myself to drive the truck and sing "Because you're mine, I walk the line."
I also can imagine a highway filled with cars, trucks passing me, the sun that follows me from above and laughing.
Yes, the sun is laughing.
Who could imagine that the sun can be a comedian ... but really life is magic.
All that you can imagine can be yours.
So, for today, let's imagine that we are all together and that together we make magic called "Nutella Pots de Creme." Just us. The stars in the universe.
During this time, please take a little magical dust into the air and then move closer ... and believe ...
Here is the recipe....

4 cups heavy cream
1/2 cup sugar
1 1/2 cup Nutella
5 egg yolks
1/2 teaspoon vanilla extract
1/2 teaspoon rum

Directions: Preheat the oven to 350 degrees F.

1. Heat the heavy cream and sugar until the sugar is dissolved.

 
 
2. Whisk the egg yolks. Set aside.
 



3. In another bowl, mix nutella, vanilla and rum and pour it over cream mixture. Whisk until nutella mixes in with the cream.






4. Take the nutella and cream mixture and slowly pour it into the bowl with the egg yolks. Mix...




Once all of the ingredients are well mixed, pour the mixture into ramekins.
Place the ramekins in a deep baking pan and fill the pan with hot water.

 
 
5. Bake in the oven for 33 min.
 
 

Allow to cool and then refrigerate for 2-4 hrs...
